Timing is key

Olives are handpicked or gently machine-harvested when they’re just turning from green to purple (optimal flavor & antioxidant levels). Why it matters: Picking too early gives bitterness; too late reduces freshness and polyphenols. Yes

Quick Transport & Cleaning

Olives are transported immediately to the mill (within hours) to prevent oxidation. They’re cleaned to remove leaves, twigs, and dust using air blowers and water baths. Why it matters: Delays can cause fermentation, leading to defects in flavor.

Cold Crushing (Milling)

Olives are crushed (pit and all) into a thick paste using stone mills or modern steel crushers. Temperature is kept below 27°C (80°F) to protect volatile aromas and nutrients. Why it matters: Heat destroys delicate antioxidants and flavor compounds.

Malaxation (Gentle Mixing)

Separation & Storage
